Introduction: It is estimated that approximately 600 million people become ill annually from consuming contaminated food, resulting in around 420,000 deaths. Objective: To characterize the presence of Salmonella spp. and Escherichia coli in raw chicken meat sold in different markets in North Lima during 2024. Method: A cross-sectional, descriptive study with a quantitative approach was used. The sample consisted of 48 stalls, from which one sample was taken from the storage area and another from the dispensing area. Results: It was found that 46.88% of the samples were positive for Salmonella, 26.04% for Escherichia coli, and 19.79% presented both bacteria. Furthermore, contamination was higher in the dispensing samples compared to those from the storage area. Conclusion: There is a high level of bacterial contamination, especially in open-air markets, which demonstrates deficiencies in food safety.

Introducción: Se estima que aproximadamente 600 millones de individuos enferman anualmente por el consumo de alimentos contaminados, con un saldo de alrededor a 420 000 muertes. Objetivo: Caracterizar la presencia de Salmonella spp. y Escherichia coli en carnes crudas de pollo comercializadas en diferentes mercados de Lima Norte, durante 2024. Método: Se empleó un diseño transversal, descriptivo con un enfoque cuantitativo, la muestra fue de 48 puestos, de los cuales se obtuvieron una de la conservadora y otra de la dispensa. Resultados: Se evidenció que el 46.88 % de las muestras fueron positivas para Salmonella, el 26.04 % para Escherichia coli y el 19.79 % presentó ambas bacterias. Además, la contaminación fue superior en las muestras de dispensa frente a las conservadoras. Conclusión: Existe una elevada contaminación bacteriana, especialmente en venta al aire libre, lo que evidencia deficiencias en la inocuidad alimentaria.
